Blueberry Muffins

When I was a young girl my parents sent me to Ireland to improve my english/irish. That kind of fifteen-days-studying-holiday where you do anything but studying. I have beautiful memories of Limerick and Dublin I hope to come back one day!
Just because I’ve always been a foodie I ate more muffins in those days that in my entire life!
Few days ago I picked up some berries from the farmers market to do my best blueberry muffins recipe!

Blueberry Muffin - Serves 6

Prep Time: 40 minutes

Ingredients:
  • 100 gr spelt flour
  • 1 tsp baking powder
  • 60 gr muscobado sugar
  • 100 gr yogurt
  • 20 ml soy milk
  • 30 ml evo
  • 1 egg
  • 100 gr blueberry
  • 40 gr oat flakes
Instructions:
Mix flour, baking powder and sugar. Combine yogurt, soy milk, evo and 1 egg. Coat blueberries in flour before adding them to the muffin mix. Sprinkle oat flakes over muffins before baking. Preheat oven to 180C, bake for 25 minutes.
